Sausages with Tomato and Sweet Potatoes

Ingredients
- 6
chipolataslarge sausages - 2 shallots, chopped
- 400g tin chopped tomatoes
- 1g of dried sage
- 3 sweet potatoes, peeled and cut into chunks
- olive oil
- Cook the sausages on medium high heat in oil for 10 minutes, turning the sausages occasionally.
- Add the tomatoes and sage. Season and stir well. Cook again for 10-15 minutes.
- Meanwhile, boil the sweet potato until just tender, about 7-8 minutes, then roughly crush with a little olive oil. Serve with the sausages.
This was pretty tasty although the sweet potatoes could have done with more seasoning, perhaps some basil. I used higher quality sausage this time and I think that made a big difference. It definitely tasted good and I wouldn't mind making this again.
I have not been as strict as I should have been with making sure everything was gluten free this week. I made tamago (Japanese egg crepe) over the weekend which has soy sauce, which obviously contains soy and wheat. After that, I wasn't too concerned over picking these sausages (which contain rusk which contains wheat) over the more expensive gluten free ones. This might just be the week I don't eat bread or pasta.
