Grilled Sausages with Tomato and Sweet Potatoes

Grilled Sausages with Tomato and Sweet Potatoes
Serves 2-3
Ingredients
  • 6 chipolatas large sausages
  • 2 shallots, chopped
  • 400g tin chopped tomatoes
  • 1g of dried sage
  • 3 sweet potatoes, peeled and cut into chunks
  • olive oil
  1. Cook the sausages on medium high heat in oil for 10 minutes, turning the sausages occasionally.
  2. Add the tomatoes and sage. Season and stir well. Cook again for 10-15  minutes.
  3. Meanwhile, boil the sweet potato until just tender, about 7-8 minutes, then roughly crush with a little olive oil. Serve with the sausages.

This was pretty tasty although the sweet potatoes could have done with more seasoning, perhaps some basil. I used higher quality sausage this time and I think that made a big difference. It definitely tasted good and I wouldn't mind making this again.

I have not been as strict as I should have been with making sure everything was gluten free this week. I made tamago (Japanese egg crepe) over the weekend which has soy sauce, which obviously contains soy and wheat. After that, I wasn't too concerned over picking these sausages (which contain rusk which contains wheat) over the more expensive gluten free ones. This might just be the week I don't eat bread or pasta.
