Pasta with Roasted Vegetable Sauce

Ingredients
- A carton of cherry tomatoes, halved
- 1 onion, quartered
- 1 courgette(zucchini), sliced
- 1 carrot, peeled and chopped into long thin strips
- 4-5 whole garlic cloves
- A handful of fresh basil or dried basil
- 500g fusilli
- A handful of pine nuts (optional)
- 2-3 tablespoons of olive oil
- Coat the onion, garlic, carrot, cherry tomatoes and courgette in olive oil.
- Place in a preheated oven at around 200°C. Cook all the vegetables for 20 -30 minutes.
- Ten
minutes before the vegetables are ready, cook the pasta according to
packet instructions.
- Combine together with the vegetables and serve.
This no doubt looks familiar. Once again, I'm not sure where I found the recipe. I wouldn't even call it a new recipe - rightfully, it is a variation.

1/3 of a bag of Pine Nuts at EUR 3.99/bag = EUR 1.33 at Tesco
Olive Oil, 1/10 of a bottle at EUR 3.99/bottle = EUR 0.40 at Aldi
Total Cost: EUR 4.45 for 4 servings or EUR 1.11 for one serving
