Pasta with Roasted Vegetable Sauce


Pasta with Roasted Vegetable Sauce
Serves 4

Ingredients
  • A carton of cherry tomatoes, halved
  • 1 onion, quartered
  • 1 courgette(zucchini), sliced
  • 1 carrot, peeled and chopped into long thin strips
  • 4-5 whole garlic cloves
  • A handful of fresh basil or dried basil
  • 500g fusilli
  • A handful of pine nuts (optional)
  • 2-3 tablespoons of olive oil
  1. Coat the onion, garlic, carrot, cherry tomatoes and courgette in olive oil.
  2. Place in a preheated oven at around 200°C. Cook all the vegetables for 20 -30 minutes.
  3. Ten minutes before the vegetables are ready, cook the pasta according to packet instructions.
  4. Combine together with the vegetables and serve.

This no doubt looks familiar. Once again, I'm not sure where I found the recipe. I wouldn't even call it a new recipe - rightfully, it is a variation. 




500 g fusilli: EUR 0.49 at Lidl
Carrots, 1/6 of a bag at EUR 0.99/bag = EUR 0.17 at Lidl
Shallot, 1 of a bag of 4 at EUR 0.79/bag = EUR 0.20 at Lidl
1 carton of cherry tomatoes: 0.89 at Tesco
Zucchini: EUR 0.97 at Tesco
1/3 of a bag of Pine Nuts at EUR 3.99/bag = EUR 1.33 at Tesco 
Olive Oil, 1/10 of a bottle at EUR 3.99/bottle = EUR 0.40 at Aldi
Total Cost: EUR 4.45 for 4 servings or EUR 1.11 for one serving
