Smoked Salmon, Leek and Potato Soup

Smoked Salmon, Leek and Potato Soup
Serves 2
Ingredients
  • large knob of butter
  • 1 large leek, halved and finely sliced
  • 500g floury potatoes, diced
  • 500ml chicken or vegetable stock
  • 50 ml double cream
  • 200g smoked salmon, cut into strips
  • small bunch of chives, snipped


Heat the butter in a large saucepan and add the leeks and bay leaf. Cook over a low heat for 8-10 mins or until the leek is really soft, then stir through the potatoes until coated in butter. Pour over the stock and cream and bring to a simmer, then gently bubble for 10-15 mins until the potatoes are really tender.  Serve the soup in deep bowls with the remaining smoked salmon and snipped chives on top.







The last time I tried to make a cream-type soup, it turned out very badly. This, I'm happy to say, was pretty delicious. The leeks cook down, the potatoes are tender and the salmon works well with both. The chives were a bit much and it could have done with some pepper. I did like it, but not quite enough to make it again.

200g Smoked Salmon: EUR 3.45 at Tesco
1 Leek: EUR 0.89 at Tesco
Packet of Chives: EUR 1.19 at TEsco
500g floury potatoes at EUR 0.69/1kg = EUR 0.35 at Tesco
Vegetable Stock Cub, 1 of 4 at EUR 1.50/package = EUR 0.38 at Tesco
50 ml of double cream at EUR 1.29/250ml = EUR 0.26
Total Cost: EUR 6.61 for two servings or 3.31 for one serving + the cost of the butter
